The domaine's gateway red — a light-footed, gourmand Pinot Noir from the cooler hills above the Côte de Beaune, made to be poured young and enjoyed often.

Description

The region

The Hautes-Côtes de Beaune sits back from the main slope of the Côte de Beaune, on a plateau roughly 100–150 metres higher than the great village and Premier Cru vineyards below it. The altitude and cooler air keep ripening slower and acidity higher, which historically made the zone Burgundy's "second row" — but in skilled, low-intervention hands like Ludovic Pierrot's it produces wines of real energy and drinkability rather than dilution.

The vines

100% Pinot Noir, farmed organically and biodynamically (Ecocert/Demeter) on the estate's Hautes-Côtes parcels, hand-harvested and vinified with the same minimal-intervention approach — indigenous-yeast fermentation, gentle extraction, ageing in a measured proportion of French oak — used across the range.

Food pairing
Charcuterie boards and terrines
Roast or grilled chicken, poultry in cream sauce
Mushroom dishes (risotto, tarts)
Soft cow's-milk cheeses (Brie, Coulommiers)
Light bistro fare: steak-frites, croque-monsieur, roast pork

Serve lightly chilled, around 14–15°C, in generous Burgundy glasses. Drink now through its first 3–5 years.

My Vineyard

Ludovic Pierrot Domain

  • Biodynamics is at the heart of the practices of Ludovic Pierrot Vineyards in Burgundy and Beaujolais. As a dedicated winemaker, Ludovic Pierrot unveils the terroirs and offers wines with authentic aromas.

  • Biodynamic viticulture, founded by Rudolf Steiner, encompasses the cultivation of the vine all the way through to winemaking. To achieve the right balance between the plant and the soil, the winemaker works the land and uses biodynamic preparations, energizing composts, and plants. All of this is done in accordance with the biodynamic calendar.

  • Biodynamics describes these viticultural practices based on a vision of the earth as a living whole, giving the terroir the opportunity to express itself and reveal its distinctiveness while enhancing its immunity.

Perfums

Nose: open and airy, dominated by fresh red fruit — redcurrant, cherry, wild strawberry — with a light floral lift.

Tasting

Tasting notes
Colour: bright, translucent ruby.

Palate: gourmand and fine, with a supple, "airy" texture (as the domaine itself describes its Hautes-Côtes bottling); freshness carries the wine to a clean, precise finish, with tannins that stay soft and fine rather than gripping.

An easy, immediately pleasurable style — the perfect first handshake with the estate's philosophy before moving up to the Santenay village and Premier Cru wines.
